Preparation
- Boil the sweet potatoes in a pot of water until they are tender, about 15-20 minutes. Drain and let them cool.
- Mash the sweet potatoes in a bowl. Stir in sugar, cinnamon, nutmeg, and salt until well combined. Set aside.
- In another bowl, mix the flour and butter until crumbly. Add the sweet potato mixture and mix until a dough forms. If the dough is too sticky, gradually add a bit more flour until you reach a workable consistency.
- On a floured surface, roll out the dough until it's about 1/8 inch thick. Use a round cutter (about 4 inches in diameter) to cut out circles.
- Place about a tablespoon of the sweet potato mixture in the center of each dough circle. Fold the dough over like a half-moon and pinch the edges to seal, ensuring the filling is secure.
Cooking
- In a deep frying pan, heat oil over medium heat. Once hot, carefully place a few hand pies in the oil, frying until golden brown on both sides, about 3-4 minutes. Remove them and drain on paper towels.
- In a small bowl, mix powdered sugar and milk together until smooth. Drizzle over the warm hand pies.
- Let your sweet potato hand pies cool for a moment before serving. They’re best enjoyed warm!
Notes
Watch the oil temperature closely while frying to avoid burning or greasy hand pies. Feel free to experiment with different spices and flavors in the filling. You can also bake the hand pies at 375°F for about 20-25 minutes until golden.
