  • 1 cup unsalted butter, softened Quality butter enhances flavor.
  • 1 cup granulated sugar
  • 4 large eggs At room temperature for better mixing.
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Sifted for better texture.
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup fresh or frozen cherries, pitted and halved Thaw and drain frozen cherries to avoid excess moisture.
  • 0.5 cup sliced almonds
Glaze Ingredients (Optional)
  • 1 cup powdered sugar For glaze.
  • 2 tablespoons almond milk or regular milk For glaze.
  • 1 teaspoon almond extract For glaze.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy.
  3. Incorporate the eggs one at a time, mixing well before adding the next. Then mix in the almond and vanilla extracts.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add to the butter mixture, mixing until just combined.
  5. Gently fold in the halved cherries and sliced almonds.
Baking
  1. Pour the batter into the prepared pan and smooth the top with a spatula.
  2. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  3. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
Glazing (Optional)
  1. If desired, mix the powdered sugar, almond milk, and almond extract until smooth, then drizzle over the cooled cake.

Notes

Store the cake in an airtight container. Best enjoyed fresh, but can last up to five days in the fridge.
