Method
Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the vanilla cake mix, water, vegetable oil, and eggs. Mix until smooth, ensuring there are no lumps.
Baking
- Pour the batter into a greased 9x13-inch baking pan.
- Bake according to the package instructions, typically about 30-35 minutes, or until a toothpick inserted in the center comes out clean.
Cooling and Poking
- Once baked, let the cake cool in the pan for about 10 minutes.
- Use the handle of a wooden spoon or a fork to poke holes all over the top of the cake.
Adding Gelatin
- In a medium bowl, dissolve the berry-flavored gelatin in 1 cup of boiling water, stirring until fully dissolved.
- Pour the gelatin over the cake, ensuring it covers all the holes.
Chilling
- Refrigerate the cake for at least 2 hours or until the gelatin is set.
Topping and Serving
- Once the gelatin has set, spread a generous layer of whipped cream or Cool Whip over the top of the cake.
- Finish by decorating the cake with fresh berries.
- Cut the cake into squares and serve chilled.
Notes
For best results, do not skip the cooling process before poking the cake. You can use fresh or frozen berries, but if using frozen, ensure they are thawed and drained. The cake can be made a day in advance.
