  • 1 package graham crackers
  • 2 cups cream cheese, softened Ensure it's at room temperature for easier mixing.
  • 1 cup powdered sugar Adjust sweetness to taste.
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream Must be whipped until stiff peaks form.
  • 2 cups mixed fresh summer berries (such as strawberries, blueberries, and raspberries) Use a mix for a colorful and flavorful cake.

Preparation
  1. In a large bowl, beat the softened cream cheese with an electric mixer until smooth.
  2. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
Whipping the Cream
  1. In another bowl, whip the heavy cream until stiff peaks form.
  2. Gently fold the whipped cream into the cream cheese mixture until well blended.
Layering
  1. Choose a rectangular dish and layer graham crackers at the bottom.
  2. Spread a generous layer of the cream mixture over the crackers and top with a layer of mixed berries.
  3. Continue layering graham crackers, cream, and berries until all ingredients have been used, finishing with a layer of berries.
Chilling and Serving
  1. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  2. Once chilled, slice the cake into squares and serve, garnished with additional berries or whipped cream if desired.

Notes

Store leftovers covered in the fridge for up to three days. The cake is best enjoyed fresh.
