Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs and vanilla, mixing until well incorporated.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, alternating with the milk, until just combined.
- Pour the batter into a greased 10x15 inch sheet pan and spread evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Topping Preparation
- While the cake cools, slice your strawberries and mix them with a bit of sugar if desired to enhance their sweetness.
- Beat the heavy cream until soft peaks form. Sweeten to taste if desired.
Assembly
- Once the cake is cool, cut it into squares. Place a square on a plate, top with sweetened strawberries and a dollop of whipped cream. Add another square on top, and adorn with more strawberries and cream.
Notes
For a perfect strawberry sheet shortcake, choose ripe strawberries, avoid overmixing, and assemble just before serving to keep it fresh. Try different toppings like lemon curd or a mixed berry medley for various flavors.
