Ingredients
  

For the cookies
  • 3 1/4 cups all-purpose flour (plus more for rolling out the dough)
  • 1 1/2 tablespoons ground ginger
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened (1 1/2 sticks) Make sure at room temperature
  • 3/4 cup light brown sugar (packed)
  • 1/2 cup molasses
  • 1 large egg (room temperature)
For the royal icing
  • 2 1/2 cups powdered sugar
  • 4 tablespoons warm water
  • 2 tablespoons meringue powder
  • 1/2 teaspoon cream of tartar
  • Sprinkles of your choice For decoration

Method
 

Preparation
  1. Combine the flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt in a bowl. Mix well and set aside.
  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Add the molasses and egg, mixing until combined.
  3. Gradually add the flour mixture to the butter mixture, stirring until a dough forms. Wrap the dough in plastic wrap and chill in the refrigerator for at least 1 hour.
Baking
  1. Preheat your oven to 350°F (175°C). Roll out the chilled dough on a floured surface to about 1/4 inch thick.
  2. Cut out gingerbread men shapes using a cookie cutter.
  3. Place the cut-out cookies on a baking sheet lined with parchment paper. Bake for 8-10 minutes or until the edges are firm.
Making Royal Icing
  1. Mix the powdered sugar, warm water, meringue powder, and cream of tartar in a bowl until smooth. If needed, add more water to reach your desired consistency.
Decorating
  1. Decorate the cooled cookies with royal icing and sprinkles as desired.

Notes

Store cookies in an airtight container at room temperature for up to a week. To keep them fresh longer, freeze in a sealed bag.
