Method
Preparation
- Preheat your oven to 350°F (175°C) and prepare a cupcake pan with liners.
- In a bowl, mix together the flour, graham cracker crumbs, cocoa powder, baking powder, and salt.
- In a separate bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing after each addition. Then incorporate the vanilla extract.
- Gradually add the dry mixture to the wet ingredients, alternating with the whole milk. Blend until just mixed.
- Spoon the batter into the prepared cupcake liners, filling each about two-thirds full.
Baking
- Bake in preheated oven for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow the cupcakes to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
Finishing Touch
- Once cooled, top the cupcakes with a generous dollop of chocolate ganache and sprinkle mini marshmallows on top.
- Optionally, lightly toast the marshmallows with a kitchen torch for extra flavor.
Notes
Store leftover cupcakes in an airtight container at room temperature for up to three days, or refrigerate for longer freshness.
