Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
- In a medium bowl, mix the dry ingredients: flour, graham cracker crumbs, baking powder, and salt. Set aside.
Mixing
- In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add the egg and vanilla, mixing until combined.
- Gradually fold in the dry ingredients, mixing until just combined to avoid overworking the dough.
- Stir in the chocolate chips and any optional add-ins.
Baking
- Spread half of the cookie dough evenly in the prepared pan for the bottom layer.
- Evenly distribute mini marshmallows and more chocolate chips over the dough layer.
- Top with the remaining cookie dough, spreading it out carefully to cover the marshmallows.
- Bake for 20-25 minutes or until the edges are golden and the top looks set.
- Let the bars cool in the pan for at least 30 minutes before cutting into squares.
Notes
Ensure your butter is softened, and do not overmix the dough once you add the dry ingredients. Add mini marshmallows on top during the last five minutes of baking for extra gooeyness. Let the bars cool completely for easier cutting.
