- Preheat oven to 350°F (175°C). Prepare muffin tin with paper liners or grease lightly.
- In a large bowl, whisk the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla until smooth.
- In another bowl, sift together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Fold in chocolate chips.
- Spoon the batter into muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow muffins to cool in the pan for a few minutes before transferring to a wire rack.
Notes
For best results, use room temperature ingredients, don’t overmix the batter, and opt for a crunchy topping if desired. Adjust spices for personal preference.
