Ingredients
  

Doughnut Base
  • 2 cups mashed potatoes Use leftover mashed potatoes if available.
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup milk
  • 1/4 cup butter, melted
  • 2 medium eggs
  • 1 tablespoon baking powder Ensure freshness for best results.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
For Frying and Topping
  • Oil for frying Enough to allow doughnuts to float while frying.
  • Powdered sugar for dusting

Method
 

Preparation
  1. In a large mixing bowl, combine the mashed potatoes, sugar, and melted butter. Mix until smooth.
  2. Incorporate the eggs, milk, and vanilla extract into the potato mixture, stirring until well blended.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  4. Lightly flour your work surface. Roll out the dough to about 1/2 inch thick. Use a doughnut cutter or two round cookie cutters to shape your doughnuts.
Cooking
  1. In a deep skillet or frying pan, heat oil over medium heat until it is about 350°F.
  2. Gently place the doughnuts in the oil, a few at a time. Fry for about 2-3 minutes on each side or until golden brown.
  3. Use a slotted spoon to remove the doughnuts from the oil and place them on a paper towel-lined plate to drain excess oil.
Serving
  1. Once cooled, dust the doughnuts with powdered sugar and serve.

Notes

For best results, use leftover mashed potatoes. You can experiment with different shapes and flavor enhancers like cinnamon or chocolate chips. Fry in batches to ensure even cooking.
