Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 8-inch round cake pans.
  3. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  4. Pulse the shelled pistachios in a food processor until finely ground and combine them with the dry ingredients.
  5. In another bowl, beat the melted butter and sugar until light and fluffy.
  6. Incorporate the eggs one by one, ensuring each is fully mixed before adding the next.
Baking
  1. Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined.
  2. Fold in the fresh raspberries.
  3. Divide the batter evenly between the prepared pans.
  4. Bake for 25-30 minutes or until a toothpick comes out clean.
  5. Let the cakes cool in their pans for about 10 minutes, then turn them out onto wire racks to cool completely.
  6. Before serving, dust the top with powdered sugar.
