Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 0.5 cups sugar
  • 0.5 tablespoons baking powder
  • 0.25 teaspoons baking soda
  • 0.25 teaspoons salt
Wet Ingredients
  • 0.5 cups buttermilk
  • 0.25 cups unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
Additions
  • 1 cups fresh peaches, diced Use ripe and sweet peaches.
  • 0.5 cups cream cheese, softened Make sure it is at room temperature.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. Whisk until well incorporated.
  3. In another bowl, whisk together the buttermilk, melted butter, egg, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and gently stir until just combined.
  5. Carefully fold in the diced peaches and softened cream cheese, ensuring not to over-mix.
  6. Line a muffin tin with paper liners or grease it well, then fill each cup about 2/3 full with the batter.
  7. Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Choose ripe peaches for the best sweetness. Use room temperature ingredients for optimal texture. Avoid over-mixing the batter.
