- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. Whisk until well incorporated.
- In another bowl, whisk together the buttermilk, melted butter, egg, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and gently stir until just combined.
- Carefully fold in the diced peaches and softened cream cheese, ensuring not to over-mix.
- Line a muffin tin with paper liners or grease it well, then fill each cup about 2/3 full with the batter.
- Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
