Muffin Base Ingredients
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups diced fresh peaches (or canned peaches, drained)
  • 1/2 cup crushed pecans or walnuts (optional)
Streusel Topping Ingredients
  • 1/3 cup sugar
  • 1/4 cup flour
  • 1/4 cup butter
  • 1/2 teaspoon cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease your muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until well combined.
  3. In another bowl, mix the melted butter, milk, eggs, and vanilla extract until it’s smooth.
  4. Gradually add the wet mixture to the dry ingredients, stirring until just combined. Gently fold in the diced peaches and nuts if you’re using them.
  5. In a small bowl, combine the sugar, flour, butter, and cinnamon for the streusel topping until crumbly.
  6. Spoon the batter into your prepared muffin tin, filling each cup about two-thirds full. Sprinkle the streusel topping over each muffin.
Baking
  1. Place the muffin tin in the oven and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let them cool in the pan for a few minutes before transferring to a wire rack. Enjoy your warm muffins as they are or with a pat of butter!
