Preparation
- Set all your ingredients out for a smoother process.
Make the Oreo Crust
- Crush the Oreos in a food processor or blender until you have fine crumbs.
- In a bowl, mix the Oreo crumbs with melted butter until combined.
- Press the mixture into the bottom of a 9-inch springform pan and chill in the refrigerator.
Create the Creamy Filling
- In a mixing bowl, beat together Greek yogurt (or blended cottage cheese), cream cheese, powdered sugar, and vanilla extract until creamy.
- Pour the filling over the chilled Oreo crust and smooth it out with a spatula.
- Cover the cheesecake and refrigerate for at least 4 hours, or overnight for better results.
Serve and Enjoy
- Before serving, add chocolate shavings or extra crushed Oreos on top.
- Remove the sides of the springform pan, slice, and serve.
Notes
For best results, let the cheesecake chill overnight. Use room temperature ingredients for a smoother filling. You can substitute vanilla extract with mint or almond extract for variation. Store in an airtight container in the fridge for up to a week or freeze for up to three months.
