Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
For the filling
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 to 3 ripe peaches, sliced Choose slightly firm peaches for best results.

Method
 

Preparation of the Crust
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the flour, powdered sugar, and salt. Add the softened butter and mix until a dough forms.
  3. Press the dough into the bottom and up the sides of mini tart pans. Prick the bottoms with a fork to prevent bubbling.
Baking the Crust
  1. Bake for about 15-20 minutes, or until the edges are lightly golden. Allow to cool completely.
Making the Filling
  1. In a separate bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
Assembling the Tarts
  1. Spoon the cream cheese mixture into the cooled tart shells. Top with sliced peaches, arranging them artfully for presentation.
Chilling and Serving
  1. Refrigerate the tarts for at least 30 minutes to help set the filling. Serve cold for the best taste and texture.

Notes

Select ripe peaches for the best flavor. You can also experiment with other fruits. The crust and filling can be prepared ahead of time, but assemble just before serving.
