For the Pastry
  • 1 sheet refrigerated pie crust Store-bought or homemade.
  • 1 large egg For egg wash.

Method
 

Preparation
  1. In a bowl, gently toss the fresh blueberries with sugar, cornstarch, and lemon juice. Allow to sit for about 10 minutes.
  2. Preheat the oven to 400°F (200°C).
  3. On a lightly floured surface, roll out the pie crust to about 1/8-inch thickness and cut it into small circles, about 5-6 inches in diameter.
Assembly
  1. Place a small spoonful of the blueberry mixture in the center of each dough circle.
  2. Carefully fold the edges of the dough over the filling, leaving the center exposed.
  3. Beat the egg and brush it over the folded edges of the dough. Sprinkle sugar over the edges.
Baking
  1. Place the galettes on a parchment-lined baking sheet and bake for 20-25 minutes or until golden brown.
  2. Allow to cool slightly before serving.

Notes

For extra flavor, consider adding spices such as cinnamon or nutmeg to the blueberry mixture. These galettes pair well with vanilla ice cream or whipped cream.
