Ingredients
  

For the Cupcakes
  • 1.75 cups 1 ¾ cups all-purpose flour
  • 1.5 cups 1 ½ cups granulated sugar
  • 0.75 cups ¾ cup unsweetened cocoa powder
  • 1.5 teaspoons 1 ½ teaspoons baking powder
  • 1.5 teaspoons 1 ½ teaspoons baking soda
  • 1 teaspoon 1 teaspoon salt
  • 2 large 2 large eggs At room temperature
  • 1 cup 1 cup whole milk At room temperature
  • 0.5 cups ½ cup vegetable oil
  • 2 teaspoons 2 teaspoons vanilla extract
  • 1 cup 1 cup boiling water Do not skip this step for moist cupcakes
For the Orange Frosting
  • 1 cup 1 cup unsalted butter, softened
  • 4 cups 4 cups powdered sugar
  • 0.25 cups ¼ cup heavy cream
  • 2 teaspoons 2 teaspoons orange zest
  • 1 teaspoon 1 teaspoon vanilla extract
  • Orange food coloring (optional, for a brighter hue)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Beat in the eggs, milk, vegetable oil, and vanilla extract until smooth. Gradually stir in boiling water. The batter will be thin.
  4. Pour the batter into cupcake liners, filling each about two-thirds full.
Baking
  1. Place the muffin tin in the preheated oven and bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  2. Remove the cupcakes from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Making the Frosting
  1. While your cupcakes cool, prepare the frosting. In a mixing bowl, beat the softened butter until creamy.
  2. Gradually add powdered sugar, orange zest, heavy cream, and vanilla, mixing until fluffy.
  3. If using, add orange food coloring to reach your desired vibrancy.
Decorating
  1. Once the cupcakes are completely cool, frost each one generously with the orange frosting using a piping bag or a spatula.
  2. For a touch of Halloween spirit, consider decorating with themed sprinkles or a small candy pumpkin on top.

Notes

Store cupcakes in an airtight container. They can be kept at room temperature for up to three days or in the fridge for about a week. For longer storage, freeze for up to three months but frost after thawing.
