For the cake
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk room temperature
  • 1/2 cup rainbow sprinkles
For the glaze
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C) and grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, cream the softened butter and granulated sugar until fluffy and pale.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Slowly add the dry mixture to the wet mixture, alternating with the milk, mixing until just combined.
  6. Gently fold in the rainbow sprinkles.
  7. Pour the batter into the prepared pan and smooth the top.
Baking
  1. Bake for 60 to 70 minutes or until a toothpick comes out clean.
Cooling and Glazing
  1. Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack.
  2. For the glaze, mix the powdered sugar, milk, and vanilla extract until smooth, then drizzle it over the cooled cake.

Notes

Using room temperature ingredients helps achieve a smoother batter. Don’t overmix after combining wet and dry ingredients to prevent density. Feel free to customize with ingredients like chocolate chips or citrus zest.
