Assembling the Pies
- On a lightly floured surface, roll out the chilled dough to a thickness of about 1/8 inch.

- Place a spoonful of peach filling in the center of each dough circle.

Frying
- Heat oil in a deep frying pan over medium heat; test with a small piece of dough to check readiness.
- Fry the pies two or three at a time, until golden brown, about 3-4 minutes per side.
- Transfer the fried pies to a paper towel-lined plate to drain excess oil.

- In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
