Ingredients
  

For the Fig Filling
  • 1 pound fresh figs, stems removed and roughly chopped Ripe figs are best for sweetness.
  • 1/2 cup brown sugar
  • 1 tablespoon lemon juice Fresh lemon juice recommended.
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon (optional) Add for extra warmth in flavor.
For the Dough
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened Room temperature.
  • 1/2 cup sugar
  • 1 egg large At room temperature.
  • 1 teaspoon vanilla extract For flavor.
  • 3 tablespoons milk Add gradually to dough.

Method
 

Prepare the Fig Filling
  1. In a medium saucepan over medium heat, combine chopped figs, brown sugar, lemon juice, and vanilla extract. Add cinnamon if desired.
  2. Cook for about 5-7 minutes, stirring occasionally, until figs soften and mixture thickens. Remove from heat and let cool.
Make the Dough
  1. In a large bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In another bowl, cream the softened butter and sugar until light and fluffy.
  3. Beat in the egg and remaining vanilla extract to the butter-sugar mixture.
  4. Gradually incorporate the dry ingredients into the wet, alternating with the milk until well combined.
Assemble the Cookies
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Divide the dough in half, rolling each half into a rectangle on a floured surface.
  3. Spoon the fig filling along the center of each rectangle, spreading it evenly.
  4. Fold the dough over the filling, pressing down gently to seal, then slice each log into squares.
Bake and Enjoy
  1. Place the squares onto the prepared baking sheet, leaving some space between each cookie.
  2. Bake for 12-15 minutes, or until the cookies are golden brown.
  3. Allow to cool on a wire rack before indulging.

Notes

Use ripe figs for the best flavor. If the dough is too sticky, chill in the fridge for about 30 minutes before rolling.
