For the Cake
  • 2 boxes instant vanilla pudding mix
  • 4 cups milk
  • 1 container whipped topping (Cool Whip)
  • 1 box graham crackers
  • 1 cup chocolate fudge sauce
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a large bowl, combine the instant vanilla pudding mix and milk. Whisk until the mixture is smooth and thickened.
  2. Stir in the vanilla extract and then fold in the whipped topping until well blended.
Layering
  1. In a 9x13 inch dish, start with a layer of graham crackers at the bottom.
  2. Spread half of the pudding mixture over the graham crackers.
  3. Drizzle half of the chocolate fudge sauce over the pudding layer.
  4. Repeat the layers: another layer of graham crackers, followed by the remaining pudding mixture, and finally, the rest of the chocolate fudge on top.
Chill
  1. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight for the best texture.
Serve
  1. Once chilled, slice into squares and enjoy your Eclair Icebox Cake.
  2. You can garnish with additional whipped topping or chocolate shavings if desired.

Notes

Use high-quality ingredients for the best flavor. The cake's consistency improves with more chilling time; if possible, let it sit overnight. You can also easily customize the flavors of pudding.
