Ingredients
  

For the crust
  • 1.5 cups all-purpose flour
  • 0.5 cups powdered sugar
  • 0.5 cups unsalted butter, softened
For the lemon filling
  • 1 cups granulated sugar
  • 2 large eggs
  • 0.33 cups fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon baking powder
  • 1 pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour and powdered sugar with softened butter until the mixture resembles coarse crumbs.
  3. Press the mixture firmly into the bottom of a greased 9x9-inch baking pan. Bake for about 15 minutes until lightly golden.
Make Lemon Filling
  1. In another bowl, beat the eggs and mix in granulated sugar, fresh lemon juice, lemon zest, baking powder, and a pinch of salt. Blend until smooth.
Combine and Bake
  1. Pour the lemon filling over the baked crust. Return to the oven and bake for an additional 20-25 minutes, or until the filling is set with a slight jiggle in the center.
Cool and Serve
  1. Allow the squares to cool in the pan before transferring to a cool surface. Once completely cool, sprinkle with powdered sugar.
