  • 1.5 cups graham cracker crumbs
  • 4 tablespoons ground nuts (or pecans, almonds)
  • 0.25 cups sugar
  • 1 stick unsalted butter (melted)
For the filling
  • 1 tablespoon lime zest (grated, optional) For added flavor
  • 3 large egg yolks (room temperature)
  • 1 14oz can sweetened condensed milk
  • 0.5 cups fresh lime juice (around 4-5 medium limes) Use fresh for best flavor
  • 2 tablespoons fresh lemon juice (around 1 medium lemon)
  • Grated lime zest and slices for decoration (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, ground nuts, sugar, and melted butter. Mix until well combined and the mixture holds together.
  3. Firmly press the crust mixture into the bottom of a greased 9x9 inch baking pan.
  4. In a separate bowl, whisk together the egg yolks, sweetened condensed milk, lime juice, and optional lime zest until smooth and creamy.
  5. Pour the filling over the crust in your baking pan, spreading it evenly.
Baking
  1. Bake in the preheated oven for about 15 to 20 minutes, until the filling is set.
Cooling
  1. Allow the bars to cool at room temperature.
  2. Once cooled, refrigerate for at least 2 hours before serving to let the flavors meld.
Serving
  1. Slice the bars into squares, and garnish with extra lime zest or slices if desired.

Notes

Consider using fresh limes for the best flavor. Store leftovers in an airtight container in the refrigerator for up to three days.
