  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 cup cookie butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup Biscoff cookie crumbs Optionally for topping

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, combine the melted butter, cookie butter, granulated sugar, and brown sugar. Mix until smooth. Add in the eggs and vanilla extract, whisking until fully incorporated.
  3. In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry mixture to the wet mixture, stirring gently just until combined. Avoid over-mixing!
  5. Spoon the batter into the prepared cupcake liners, filling each about 2/3 full. Optionally, sprinkle Biscoff cookie crumbs on top before baking.
Baking
  1. Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  2. Allow the cupcakes to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
Frosting
  1. Once completely cooled, frost with your favorite frosting. A cream cheese or buttercream frosting pairs beautifully with the flavor of cookie butter.

Notes

Gently fold ingredients together to avoid dense cupcakes. Use high-quality cookie butter for best flavor. Consider using cookie butter frosting or light vanilla buttercream.
