Method
Preparing the Cake Base
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- Melt the dark chocolate over simmering water in a heatproof bowl. Stir until smooth and set aside to cool slightly.
- In a mixing bowl, combine the melted chocolate with softened butter. Beat in sugar and room temperature eggs until creamy.
- Gradually incorporate sifted flour and salt until just combined. Pour the batter into the prepared cake pan.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean. Check for doneness.
Making the Mousse
- While the cake is baking, whip the heavy cream in a chilled bowl until soft peaks form, being careful not to overwhip.
- Fold the melted chocolate gently into the whipped cream to keep it airy and light. Ensure it is evenly mixed.
Assembling the Cake
- Once the cake is cooled, slice it in half horizontally.
- Spread a generous layer of mousse between the two layers and cover the top with more mousse.
Chilling and Serving
- Refrigerate the assembled cake for at least 4 hours to allow the mousse to set.
- Serve chilled, optionally garnished with chocolate shavings or fresh berries.
Notes
Use high-quality chocolate for the best taste. Store leftovers in the refrigerator. The cake can also be frozen; just ensure it's wrapped properly.
