Ingredients
  

Base
  • 40 oz Refrigerated chocolate chip cookie dough Chill before slicing for easier handling.
Cheesecake Filling
  • 16 oz Cream cheese Softened for easier mixing.
  • 1 large Egg Bring to room temperature before mixing.
  • 1/4 cup Granulated sugar
  • 1/2 teaspoon Vanilla
  • 1 teaspoon Lemon juice (optional) Optional for added flavor.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F.
  2. Place the cookie dough in the freezer for a few hours to make it easier to slice.
  3. Allow the cream cheese to soften for easier mixing.
  4. Let one large egg sit out until it reaches room temperature.
  5. Line a 13x9 inch pan with parchment paper or non-stick foil.
  6. Slice half of the cookie dough into 1/4 inch pieces and arrange it in the bottom of the lined pan.
  7. Press the cookie dough into the pan to form a base.
  8. Bake in the preheated oven for 10 minutes.
Cheesecake Mixture
  1. While the crust is baking, beat together the softened cream cheese, egg, sugar, and vanilla in a bowl with an electric mixer on medium speed.
  2. Spread the cheesecake batter evenly over the crust as soon as it comes out of the oven.
  3. Slice the remaining cookie dough and lay it on top of the cheesecake layer.
  4. Return the pan to the oven and bake for an additional 35 to 40 minutes.
  5. Once done, allow the bars to cool, then refrigerate before serving.

Notes

Serve chilled for the best taste. For extra flair, add a drizzle of chocolate sauce or a dollop of whipped cream on top. Store leftovers in an airtight container in the refrigerator for 3 to 5 days, or freeze for 2 to 3 months.
