For the Cupcakes
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cups unsalted butter, softened Room temperature
  • 2 large eggs Room temperature
  • 0.5 cups milk Room temperature
  • 2 teaspoons vanilla extract High-quality recommended
  • 1.5 teaspoons baking powder
  • 0.25 teaspoons salt
  • 0.5 cups cherry jam For filling
  • 1 cup white chocolate chips
For the Frosting
  • 0.5 cups unsalted butter Room temperature
  • 2 cups powdered sugar
  • 2 tablespoons milk For consistency
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, then add vanilla extract, ensuring it's fully incorporated.
  5. Gradually add dry mixture to wet mixture, alternating with milk, starting and ending with dry ingredients. Mix until just combined.
  6. Fold in cherry jam and white chocolate chips gently.
  7. Line muffin tin with cupcake liners and fill each about two-thirds full with batter.
Baking
  1. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  2. Allow cupcakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Frosting
  1. Beat unsalted butter until creamy. Gradually add powdered sugar, then milk and vanilla extract until smooth.
  2. Frost cupcakes generously once they are completely cool, and add a dollop of cherry jam on top for decoration.
