Ingredients
  

For the Crust and Topping
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
For the Blueberry Filling
  • 1 cup fresh or frozen blueberries If using frozen, thaw and drain excess liquid.
  • 1/4 cup brown sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the softened butter, granulated sugar, and salt. Slowly incorporate the flour and oats until you achieve a crumbly texture.
  3. Reserve about 1/2 cup of the crumble mixture for the topping. Press the rest into the bottom of an 8x8-inch baking pan to form a solid crust.
Making the Filling
  1. In another bowl, toss the blueberries with brown sugar, lemon juice, and vanilla extract until well coated.
  2. Evenly distribute the blueberry mixture over your prepared crust.
Baking
  1. Sprinkle the reserved crumble mixture evenly over the blueberries.
  2. Place in the preheated oven and bake for 30-35 minutes or until the top is golden brown and the blueberries are bubbling.
  3. Allow to cool in the pan before slicing into squares or bars.

Notes

Serve warm, cold, or at room temperature. Pair with vanilla ice cream for dessert or yogurt for breakfast. Store in an airtight container at room temperature for up to 3 days or freeze for up to a month.
