Preparation
- Preheat your frying oil in a deep pan or fryer to about 350°F (175°C).
- In a large mixing bowl, whisk together the all-purpose flour, baking powder, sea salt, and granulated sugar until combined.
- In another bowl, whisk together the melted butter, buttermilk, egg, sour cream, and vanilla bean paste.
- Slowly add the dry mixture to the wet mixture, stirring gently until just combined. Be careful not to over-mix!
- Fold in the frozen wild blueberries gently.
- Shape the donuts using a donut cutter or two round cutters, or form them by hand.
- Carefully place each donut in the hot oil, frying for about 2-3 minutes on each side, until golden brown.
- Transfer fried donuts to a cooling rack to drain excess oil.
- In a separate bowl, combine powdered sugar, whole milk, freeze-dried blueberry powder, and blueberry emulsion or extract. Whisk until smooth.
- Dip the tops of the cooled donuts into the blueberry glaze, allowing excess to drip off.
- Let the glaze set for a few moments, then enjoy your blueberry cake donuts warm or at room temperature.
