  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar You can reduce this to 1/2 cup for a less sweet bread.
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth, leaving a few small chunks for texture.
  3. Stir in the melted butter until well combined.
  4. Sprinkle the baking soda and salt over the banana mixture and stir to incorporate.
  5. Add the sugar, beaten egg, and vanilla extract. Stir until evenly mixed.
  6. Gently fold in the flour until just combined.
  7. Pour the batter into a greased 9x5-inch loaf pan, smoothing the top.
Baking
  1. Bake in the preheated oven for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the banana bread cool in the pan for about 10 minutes before transferring it to a wire rack.

For the perfect loaf, avoid overmixing to ensure a tender texture. Experiment with add-ins like nuts or chocolate chips for variation.
