Preparation
- Preheat your oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs, sugar, cinnamon, and melted butter. Mix until crumbly and press into the bottom of a 9-inch springform pan.
- In another bowl, toss sliced apples with sugar, cinnamon, and lemon juice. Let sit while you prepare the cheesecake filling.
- In a large mixing bowl, beat softened cream cheese with sugar until smooth. Add in vanilla extract and mix well. Incorporate eggs one at a time.
Assembly
- Pour half of the cheesecake batter over the crust, layer apple mixture on top, and then add remaining cheesecake batter.
- In a medium bowl, combine oats, flour, brown sugar, and softened butter until it resembles coarse crumbs. Sprinkle over the cheesecake.
Baking
- Place the springform pan in the preheated oven and bake for 50-60 minutes. The edges should be set while the center remains slightly jiggly.
- Turn off the oven and leave cheesecake inside for another hour to cool gradually.
- Once cooled, refrigerate for at least 4 hours or overnight.
Serving
- Remove sides of the springform pan and enjoy your Apple Crisp Cheesecake!
