Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the unsalted butter and cream cheese. Beat until smooth and creamy, about 2-3 minutes.
- Gradually incorporate the granulated sugar, brown sugar, and molasses. Beat until light and fluffy.
- Add the egg, egg yolk, and vanilla extract. Mix until fully incorporated.
- In a separate bowl, whisk together the flour, baking powder, cream of tartar, and salt. Gradually add this to the wet mixture, folding gently.
- Gently mix in the apple butter until evenly distributed.
- In a small bowl, combine the cane sugar and ground cinnamon. Scoop the dough into small balls (about 1 tablespoon each) and roll in the cinnamon-sugar mixture until fully coated.
Baking
- Place the coated balls on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are slightly golden, and the centers look a tad underbaked.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
