Preparation
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.
- In a large bowl, beat together the softened butter and sugar until light and fluffy, about 2-3 minutes.
- Mix in the eggs, one at a time, ensuring they are fully incorporated before adding the next. Then stir in the vanilla extract.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing just until combined. Do not overmix!
- Gently fold in the diced apples and nuts (if using) until evenly distributed throughout the batter.
Baking
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Once baked, remove the bread from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Use a mix of tart and sweet apples for the best flavor. Allow your butter and eggs to sit out for better incorporation.
