Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
Wet Ingredients
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Main Ingredients
  • 2 cups peeled and diced apples (preferably Granny Smith or Honeycrisp)
  • ½ cup chopped walnuts or pecans (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.
  3. In a large bowl, beat together the softened butter and sugar until light and fluffy, about 2-3 minutes.
  4. Mix in the eggs, one at a time, ensuring they are fully incorporated before adding the next. Then stir in the vanilla extract.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing just until combined. Do not overmix!
  6. Gently fold in the diced apples and nuts (if using) until evenly distributed throughout the batter.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  3. Once baked, remove the bread from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Use a mix of tart and sweet apples for the best flavor. Allow your butter and eggs to sit out for better incorporation.
